lemon cupcakes and gingerbread men.

Christmas is exactly two weeks away and we're baking up a storm!

Christmas is possibly my favourite time of year for baking - it's the only time I really try to step it up with the decorating. Last year I made brownies with strawberry santa hats alongside chocolate cupcakes with christmas tree icing and the year before I made coconut coated chocolate snowballs (pictured below)

This year I decided to dress up a lemon cupcake with a gingerbread man mainly because I only made one batch of cupcakes this year.
This recipe makes approximately 12 cupcakes and 30 small gingerbread men.

-LEMON CUPCAKE-
Ingredients:
100g unsalted butter, softened
100g self-raising flour
100g caster sugar
zest and juice of half a lemon
2 large eggs (around 500g)
1 tsp baking powder

100g unsalted butter, softened
100g icing sugar, sifted
zest and juice of half a lemon

Method:
1. Preheat oven to 180˚C
2. In a mixing bowl cream the butter and sugar together until light and fluffy
3. Mix in the lemon zest and juice
4. Add eggs one by one to the mixture
5. Mix in flour and baking powder
6. Spoon mixture in cupcake tray about 2/3 full
7. Bake for around 12mins then let cool completely before icing.

1. Cream the butter and sift in the icing sugar gradually
2. Mix in the lemon zest and juice
3. Pipe onto cooled cupcakes

-GINGERBREAD MEN-
Ingredients:
125g unsalted butter, softened
⅔ cup brown sugar
¼ cup honey or maple syrup
1 egg
2½ cups plain flour
½tsp baking powder
1Tsp ground ginger
2tsp ground cinnamon
Method:
1. Beat butter and sugar until light and fluffy
2. Add honey or maple syrup and egg, beat to combine
3. Sift flour, baking powder, ginger and cinnamon into butter mixture
4. Mix until a soft dough forms
5. Place dough on lightly floured surface and knead gently until smooth
6. Shape into a disc and wrap in plastic wrap, place in fridge for 1 hour
7. Preheat oven to 180˚C
8. Roll dough until around 1cm thick
9. Cut shapes with dough cutter - I used the small gingerbread men cutter
10. Re-roll dough scraps and continue to cut until dough is used up
11. Place gingerbread men on a baking tray lined with baking paper approximately 1cm apart
12. Bake for 15mins or until lightly browned
13. Set aside to cool completely before placing on top of cupcakes or enjoyed on their own.
